SALADS

 

Southwest Salad

1 bag mixed salad greens (or 3 - 4 C)

1 can black beans, drained and rinsed

2 tomatoes, chopped

1 red bell pepper, chopped

2 C frozen corn, thawed or fresh kernels

1 avocado, chopped

¼ C cilantro, chopped


Layer ingredients in order listed. Top with salsa or drizzle ranch dressing on top.

Serves 4.

Hint: You can also add sliced olives to this.

Mixed Greens Salad

Salad
1 bag mixed greens

2 Persian cucumbers, sliced

4 small yellow and/or orange bell peppers, sliced

¼ C dried black figs, diced

¼ C candied pecans

1 Bartlett pear, peeled and thinly sliced

Dressing
4 Tbs olive oil

2 ½ Tbs lemon juice, freshly squeezed

Salt to taste


In a salad platter combine greens, cucumbers, bell peppers, and figs. Just before serving, add lemon juice, olive oil, and salt to taste and toss. Sprinkle pecans on salad and place thin slices of pear on top. Enjoy! Serves 4-6.
