Date Bars

Outer Layers

1 ½ C whole wheat pastry flour

1 ½ C quick oats

½ tsp salt

½ C chopped walnuts

1 - 2 Tbs water

½ C extra light olive oil

½ C sucanat

Date Filling

2 ½ C pitted dates

2 ½ C water

Combine flour, oats, salt, water, and walnuts. In a separate bowl mix the olive oil and sucanat. Add the olive oil mixture to the flour. Press half of the mixture into the baking dish. Cook the dates in the water until they can be mashed into a paste. Let the dates cool. Spread the date paste over the crumb mixture. Then spread the rest of the crumb mixture over the dates and press it gently. Bake at 350° for 25 minutes. Makes about 25 bars.

Peppermint Ice Cream

2 pts soy creamer or Mimic Cream

½ - 1 tsp peppermint extract

½ C sucanat

Pinch of salt

½ peppermint stick, crushed

Mix the soy creamer, extract, sucanat, and salt in a pitcher and refrigerate. When you’re ready to make the ice cream, pour it into
the frozen tub and turn the machine on. After the ice cream is beginning to thicken, add the crushed peppermint candy (you will only need ½ - 1 whole peppermint stick
for one batch of ice cream).

This is a fun ice cream to make for the holidays.
