Three Grain Bread (For Bread Machines)

2 C white wheat flour

1/3 C rye flour, white or medium

1/3 C rolled oats

2 Tbs vital wheat gluten

1 tsp salt

2 Tbs olive oil

2 Tbs honey

1 C warm water

1 ½ tsp yeast


Mix the flours, oats, gluten, and salt. In the bread machine, put the olive oil, honey, and warm water. Add the flour mixture, even it out, and make a little well in the center. Put the yeast in the well and close the lid. Put the bread machine on the dough cycle. When the cycle is finished (about 1 ½ hours later), take the dough out and roll and shape it into a loaf. Put the loaf into an oiled bread pan. Have the oven preheated to 200° for about 5 minutes. Turn the oven off and put the loaf in the oven for 30 minutes to rise. After the 30 minutes, turn the oven temperature to 350° and bake for 40 - 45 minutes. Remove bread from pan and place on a wire rack to cool.

Pesto Pizza

Pesto Sauce

½ C toasted pine nuts or walnuts

1 - 2 cloves of garlic, crushed

1/3 C extra virgin olive oi

2 C fresh basil

l½ tsp salt


Blend all ingredients in the blender. You can use this on pizza, with pasta, or on a sandwich.

Pizza Crust Made in Bread Machine—Makes 2 Crusts

1 1/3 C whole wheat flour

1 1/3 C unbleached flour

2 Tbs vital wheat gluten

1 tsp salt

2 Tbs honey

2 Tbs olive oil

1 C warm water

1 ½ tsp yeast

1 ½ tsp Italian seasoning


Mix dry ingredients. In bread machine put the honey, olive oil, warm water and then add theflour mixture. Even the flour out and make a well in the center and add the yeast. Close thelid and set machine on the dough cycle. This makes 2 crusts. When the cycle is finished take enough dough to make one crust and you can freeze the rest of it.

Spread the dough on the pizza pan, poke the center of the crust with a fork in several places so it won’t puff up and then bake just the crust for 10–15 minutes at 375 degrees until the crust starts to brown. Then take it out of the oven, spread the pesto sauce on the crust. Top with sliced tomatoes, sliced green olives, sliced black olives, sliced artichoke hearts, chopped onions and then you can sprinkle Parmazaan (optional) on top. Return the pizza to the oven for 10–15 minutes or until done.
